When it comes to making breakfast for my family, I’m usually left feeling like a short ordered chef. Oatmeal, pancakes, eggs…everyone wants something different. I survived being a chef in a restaurant (hardest, craziest job, more on that later), so cooking breakfast for three kiddos and a husband, while our dog intensely stares at me waiting for her breakfast, every morning isn’t so daunting. Honestly, I’d rather prepare three different breakfasts and know that they’re each being fueled for the day than have them eat a breakfast that lacks nutrients. With that being said, let’s be real, sometimes my kids eat cereal for breakfast, and that’s ok. I just prefer on most days they fill their tummies with sustainable goodness before they tackle their days. The key to being a morning short order chef is to be prepared, have your fridge prepped with breakfast favorites so you can just pull it out and heat it up. I know at least one out of the three kids will want my weekday waffles. Which is why I always have a container of them in the fridge and also how they got their name of “Weekday Waffles”. Typically I think of waffles and think of slow Sunday mornings. Not anymore! With a little prep, waffles can be served any day of the week, even during the hustle and bustle as you rush to get out the door in the morning. They store well in the fridge, can be popped into the toaster and ready under 5 minutes. The recipe is pretty versatile. If you don’t have any hemp or flax seeds omit them, they’ll still cook to the perfect waffle texture. I’ll often add 3 tablespoons of Almond or Peanut Butter to the batter to mix it up. If I don’t add almond butter in the batter, there is a 99% chance I’ll drizzle some on top, and 100% chance I’ll lick the spoon afterwards.
Weekday Waffles

- waffle maker
Ingredients
- 1 cup oat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 3 tbsp hemp seeds
- 2 tbsp flax seeds
- 4 tbsp coconut oil or butter melted
- 2 eggs
- 1/2 cup almond milk, or milk of choice warmed
Instructions
- Plug in the waffle maker to heat up while making the waffle batter.
- In a large bowl, combine the flour, baking powder, salt, cinnamon, hemp seeds and flax seeds. Set aside.
- In a separate bowl, whisk together the eggs, coconut oil or butter and milk. Add to the dry ingredients. Whisk until combined.
- Add batter to waffle maker. Cook until golden brown.
